Simple “slice’ sandwich for lunch on the go

Today I’m going to share a delicious meal I’ve found myself making on the regular this summer: Avocado Toast Sandwich.

I’ve been trying to eat a little healthier lately because, well, swimsuit season. But, this sandwich is so good, you’ll make it even when you’re not trying to be good. Plus, it’s great for picnics and on-the go lunches…which is great, because it feels like we’re always on the go.

This recipe is super complicated, so read carefully.

Step 1: Toast two slices of your favorite whole grain bread. Or, just make sure you have a nice, hearty, crusty bread. Trust me on this.

Step 2: Add 1/2 of a sliced or mashed avocado, based on your texture preference. I prefer sliced. Add a little sea salt or fresh cracked pepper, to taste.AVOCADO TOAST SANDWICH: Simple Sliced Sandwich | Five Marigolds

Step 4:1 slice of Provolone. I use Sargento® Ultra Thin Provolone, because I’ve found it’s the perfect amount of cheese for this recipe. Plus, I like that it’s 100% Real, Natural cheese. See? Really complicated, right? With all the slices, and everything?  Just kidding. If you haven’t noticed by now, I don’t do complicated. I do easy, fast and delicious.

If you want, you can pop this sandwich under the broiler for a few minutes until the cheese is a little melty. Mmmm. But even that feels a little too complicated most days.

When I’m making this sandwich for a picnic or to eat on-the-go, I like to assemble it right on parchment or freezer paper, and wrap it up when I’m done. It lets the sandwich breathe a little better than a plastic sandwich bag so it stays more fresh and crisp. Secure with washi tape or bakery twine and you’ve got some seriously delicious “fast food” that you can feel good about eating.
