I don’t know how your summer is going, but ours has been crazy-fun, but largely unproductive. We’re not getting super far on our summer bucket list, but we ARE enjoying all the fun days of playing in the sun, VBS, swimming, boating, and visiting a ton of parks.This free summer letter template for kids is great for pen pals, summer camp, and keeping in touch with pals and relatives over summer vacation!

Here’s a simple breakfast idea that’s a huge h Here’s a simple breakfast idea that’s a huge hit in our house right now: fruity pancakes. Just slice a banana or apple rings, coat them in pancake batter and top with powdered sugar, syrup, or a cinnamon sugar mixture. Great for lunchboxes, too! Here’s the recipe I used with @nelliesfreerange eggs and butter:

½ C. Flour
1-2 Tbsp. Brown sugar
1 tsp. Baking powder
½ tsp. Cinnamon
1 C. milk
1 Nellie’s Free Range Egg
3 Tbsp. Nellie’s Free Range Unsalted Butter, melted
1 tsp. Vanilla extract
3 firm Bananas, sliced ½”
Or, 2-3 Apples, cored and thinly sliced into rings and patted dry

Combine dry ingredients in a medium bowl. In a separate small bowl, whisk together wet ingredients and slowly blend into the bowl with the dry ingredients. Dip sliced bananas or apples into the batter until well coated. Cook in an oiled saute pan on medium heat, flipping halfway through, until cooked. Top with powdered sugar, syrup, or a cinnamon sugar mixture and serve with fruit. #welcome_sept #nelliesfreerange ad #bananapancakes
