Easy WHITE CHICKEN CHILI IN THE SLOW COOKER

When the cooler weather hits, it’s time to bring on all the soups, stews, and chilis for the season. You will want something simple and easy to make, right? Let’s grab the crock pot and get it working for you.
This white chicken chili is a family favorite here. It has a rich flavor, and is totally a comfort food. Plus, it’s super easy to make. That’s a win-win in my book! You will love how easy the few simple ingredients come together, too.
To prepare in your slow cooker, start by adding a pound of cubed or shredded chicken – this is a great recipe for using up leftover rotisserie chicken! Next, add 1-2 cans of white beans, frozen corn, diced onion and minced garlic.
What kind of chicken should I use?
This recipe is totally versatile. You can use precooked, rotisserie chicken, leftover chicken breast, or even canned chicken if you have that on hand. You can also use fresh diced chicken, by simply cutting into small, bite size pieces, and cooking them in a skillet for 3-4 minutes before adding to the crockpot.
Which white beans should I use?
Again, a totally versatile recipe here. You can use Great Northern beans, Navy beans, or even white kidney (aka cannellini beans). That will depend on your flavor preferences. They all taste similar, but each has a bit of a slightly unique flavor.

Now, pour in chicken broth and diced tomatoes. Then, the “secret sauce”: 24 oz. of salsa verde, which gives this recipe its great flavor.
Add oregano, cumin, and salt and pepper to taste.
Combine all the ingredients in your slow cooker on low for 4-6 hours, or high 3-5 hours.
The result is a hearty, delicious chili…with a kick.
Serve with tortilla chips, sour cream, and cheese.
I like to get this recipe started at my house, and then take the whole slow cooker with me to the tailgate or game day party to keep it warm.

- 2 C. Salsa Verde
- 1 C. diced onion

- 1/2 t. dried oregano
- 1/2 t. ground cumin
- Salt and pepper, to taste
- Lime wedge, cilantro, cheese, or sour cream to garnish.
