THE BEST SUGAR COOKIE BARS RECIPE

Are you ready for a soft, chewy sugar cookie bar that will knock your socks off? I mean, the kind with piles of sweet cream cheese frosting? I have the best recipe for you. It’s so easy, and you can mix it up for any occasion.

You can use refrigerated sugar cookie dough, if you want. I won’t judge you at all. But, I think they are far better when you make sugar cookie bars from scratch. I adapted this recipe from Sally’s Baking addiction. Again, giving credit where credit is due, I used this cream cheese frosting recipe.
Ingredients you need:
- Unsalted butter
- Granulated sugar
- Eggs
- Almond extract
- All purpose flour
- Salt
- Baking powder
- Cornstarch
Making your sugar cookie bars:
- Preheat the oven and prepare a baking pan by lining with foil of parchment paper.
- Cream the butter, and add in sugar.
- Once nice and smooth, add in a whole egg, yolk, and almond extract.
- Whisk together dry ingredients in a separate bowl. Slowly combine with other ingredients to form the dough.
- Press dough into the prepared pan, and bake.
- Cool and frost.

An unlikely combo? Yes. But the flavor? Wicked-good.
How long can you store these sugar cookie bars?
These sugar cookie bars will store on the counter for 2-3 days, and up to a week in the refrigerator. I do not recommend freezing frosted cookies, since that will change the texture of the frosting.
If you want to make them ahead of time, simply bake the sugar cookie bars, then freeze unfrosted. When ready to serve, allow to thaw at room temperature for 2 hours, then add frosting.
